But the wheat\u2002we eat today is not much like its ancient ancestor. Modern, industrialised farming has turned this formerly healthy grain into one\u2002that, for many, is linked to health problems such as <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/books\/NBK538505\/\" target=\"_blank\" rel=\"noopener\">gluten sensitivity<\/a>, insulin resistance and digestive problems.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"quick-answer\">At a Glance: Has Wheat Changed, and Is That Why Gluten Problems Rose?<\/h2>\n\n\n\n<p><strong>Wheat has changed, but probably not in the way the headlines say.<\/strong> Modern high-yield varieties do carry measurably less zinc, iron and copper than the wheats they replaced. What they do not appear to carry is more gluten \u2014 analyses of samples across the last century have not found the increase that the popular story depends on.<\/p>\n\n\n\n<p>What changed far more than the grain is what we do with it. Vastly more of it is eaten as refined maida, in packaged food, and in bread fermented in ninety minutes rather than overnight.<\/p>\n\n\n\n<p>Coeliac disease is also being <em>diagnosed<\/em> much more often, which is not the same as occurring much more often \u2014 the <a href=\"https:\/\/higoodhealth.com\/india\/blood-diagnostic-tests\/\" data-type=\"link\" data-id=\"https:\/\/higoodhealth.com\/india\/blood-diagnostic-tests\/\">blood test<\/a> only became widely available in recent decades.<\/p>\n\n\n\n<p><strong>The one thing to take away if you read nothing else: emmer, einkorn and khapli are not gluten-free.<\/strong> They are wheat. It is what forms when two families of wheat protein, gliadin and glutenin, meet water and are worked \u2014 kneading builds them into an elastic network, and that network is what lets dough stretch, trap gas and rise.<\/p>\n\n\n\n<p>Every wheat has it. Barley and rye carry closely related proteins. Rice, maize, jowar, bajra, ragi and every other millet do not.<\/p>\n\n\n\n<p>For most people gluten is simply food, digested and forgotten. For a minority it is a genuine problem, and the three ways that happens are different enough that treating them as one thing is where most of the confusion on the internet comes from.<\/p>\n\n\n\n<p><strong>Coeliac disease<\/strong> is autoimmune, affects roughly one person in a hundred worldwide, and shows up in Indian studies at broadly comparable rates \u2014 highest in the wheat-eating north. It is diagnosed with a <a href=\"https:\/\/higoodhealth.com\/india\/blood-diagnostic-tests\/\" data-type=\"link\" data-id=\"https:\/\/higoodhealth.com\/india\/blood-diagnostic-tests\/\">blood test<\/a> and usually confirmed by biopsy, and it requires lifelong, strict gluten avoidance.<\/p>\n\n\n\n<p><strong>Wheat allergy<\/strong> is a true allergy, immediate, and can be severe. It is rare, and it is not the same condition as coeliac disease even though both involve wheat.<\/p>\n\n\n\n<p><strong>Non-coeliac gluten sensitivity<\/strong> is the large, blurry middle. Real symptoms, no autoimmune damage, no allergy, and no test that confirms it.<\/p>\n\n\n\n<p>It is diagnosed by exclusion, and there is good evidence that for many people the trigger is not gluten at all but the fermentable carbohydrates that travel with it \u2014 the FODMAPs \u2014 which is why some people who feel terrible after two slices of bread are fine with roti made from the same flour.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Gluten Intolerance, Gluten Sensitivity and Coeliac Disease: What Is Actually Linked to Wheat<\/h2>\n\n\n\n<p>The consumption of modern wheat has been linked to several health concerns:<\/p>\n\n\n\n<p><strong>1. Coeliac Disease<\/strong><\/p>\n\n\n\n<p>Coeliac disease is an autoimmune condition. In people who carry the genes for it, gluten triggers an immune reaction that damages the lining of the small intestine and impairs nutrient absorption. It is not caused by modern wheat, and it is not new \u2014 it has been described for centuries.<\/p>\n\n\n\n<p><strong>One point here is more important than everything else on this page. Emmer, einkorn, khapli and every other ancient wheat contain gluten. They are not safe for anyone with coeliac disease.<\/strong><\/p>\n\n\n\n<p>If you have coeliac disease, switching from modern wheat to an ancient variety does not help you; the only established treatment is a strictly gluten-free diet, which excludes all wheat, barley and rye.<\/p>\n\n\n\n<p>Anyone who tells you otherwise is selling something.<\/p>\n\n\n\n<p>You will also read that modern wheat contains more gluten than old varieties. <strong>The best available evidence does not support that.<\/strong> Analyses of wheat protein content in samples spanning the last century have found no meaningful increase in gluten.<\/p>\n\n\n\n<p>What has changed a great deal is how much wheat we eat and in what form \u2014 far more of it refined, far more of it in packaged food, and far more of it in fast-fermented bread that skips the long proving traditional methods used.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Autoimmune disorder<\/li>\n\n\n\n<li>Causes diarrhoea, weight loss, fatigue<\/li>\n\n\n\n<li>Triggered by gluten in genetically predisposed individuals <\/li>\n<\/ul>\n\n\n\n<p><strong>2. Non-Coeliac Gluten Sensitivity (NCGS)<\/strong><\/p>\n\n\n\n<p>Even without an autoimmune response, some individuals experience symptoms after consuming gluten, such as bloating, <a href=\"https:\/\/higoodhealth.com\/india\/early-signs-of-brain-decline\/\" data-type=\"link\" data-id=\"https:\/\/higoodhealth.com\/india\/early-signs-of-brain-decline\/\">brain fog<\/a>, or joint pain. Type 2 Diabetes &amp; Insulin Resistance<\/strong><\/p>\n\n\n\n<p>Modern wheat has a high glycaemic index, It spikes blood sugar levels quickly, straining the pancreas and contributing to <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/pii\/S0002916522034219\" target=\"_blank\" rel=\"noopener\">insulin resistance<\/a>\u2014a precursor to type 2 diabetes.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Promotes blood sugar spikes<\/li>\n\n\n\n<li>Encourages belly fat storage<\/li>\n\n\n\n<li>Increases risk for metabolic syndrome<\/li>\n<\/ul>\n\n\n\n<p><strong>4. Leaky Gut Syndrome (Increased Intestinal Permeability)<\/strong><\/p>\n\n\n\n<p>Some studies suggest modern gluten proteins can contribute to gut barrier dysfunction. This may <a href=\"https:\/\/www.cambridge.org\/core\/journals\/british-journal-of-nutrition\/article\/wheat-gluten-intake-increases-the-severity-of-experimental-colitis-and-bacterial-translocation-by-weakening-of-the-proteins-of-the-junctional-complex\/EC87DD4B5FEB88CCC81788A8C1DF66CB\" target=\"_blank\" rel=\"noopener\">allow toxins and undigested particles to enter the bloodstream, triggering systemic inflammation<\/a>.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Associated with chronic inflammation<\/li>\n\n\n\n<li>Worsens autoimmune conditions<\/li>\n\n\n\n<li>Not fully accepted in conventional medicine, but supported by emerging research<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Signs of Gluten Intolerance, and How It Is Actually Tested<\/h2>\n\n\n\n<p>The symptoms overlap almost completely with a dozen other things, which is exactly why self-diagnosis goes wrong so often. Digestive signs are bloating, wind, loose motions or constipation, and abdominal pain, usually within hours of eating.<\/p>\n\n\n\n<p>Beyond the gut, people report fatigue,<a href=\"https:\/\/higoodhealth.com\/india\/early-signs-of-brain-decline\/\" data-type=\"link\" data-id=\"https:\/\/higoodhealth.com\/india\/early-signs-of-brain-decline\/\"> brain fog<\/a>, headache, joint aches and low mood. In coeliac disease specifically there may be unexplained weight loss, iron-deficiency anaemia that will not correct with tablets, mouth ulcers, an itchy blistering rash, and in children delayed growth or delayed puberty.<\/p>\n\n\n\n<p><strong>The single most important rule about testing: do not stop eating gluten before you are tested.<\/strong> Both the <a href=\"https:\/\/higoodhealth.com\/india\/blood-diagnostic-tests\/\" data-type=\"link\" data-id=\"https:\/\/higoodhealth.com\/india\/blood-diagnostic-tests\/\">blood test<\/a> and the biopsy look for the damage gluten is doing right now.<\/p>\n\n\n\n<p>If you have been gluten-free for weeks, they can come back normal in someone who genuinely has coeliac disease, and you will be sent away with the wrong answer and no explanation for your symptoms. Get tested first, then change your diet.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Blood test (tTG-IgA), plus total IgA.<\/strong> The first-line test, widely available in India and inexpensive.
